One of the best things about Portugal is the fresh fish. We tried out a new fish soup recipe, using cod, which is a local speciality. The recipe called for cream and green apples.
There were several herbs needed, all of which we could gather fresh from the hillside around our hacienda.
The result was a rich and flavorful concoction, served over raisins and dates, which add a sweetness. We are not going hungry here.
