Alexandra Tallen grew up in Saint Paul, Minnesota before going to college in Washington, D.C. where she studied French literature and theatre. After moving to Paris in 1999, she worked for several years as a literary and historical researcher and as a translator specializing in film scripts and subtitles. Passionate about food and cooking since childhood, Alexandra decided to attend culinary school for formal training. After a fascinating year spent at the Ritz-Escoffier Culinary School in Paris, and an apprenticeship in the Ritz kitchen, she received the Grand Diplôme from the École Ritz- Escoffier in 2008.

Spring’s Harvest Menu

 

Saturday May 1:

An elegant spring meal:

  • Creamy fennel soup with star anise and hazelnuts
  • Salmon with sorrel beurre blanc
  • Spring vegetable ragout with fava beans, fresh green peas, asparagus, small artichokes
  • Lemon pudding cake with mascarpone cream and strawberries

 

After the preparation, you will sit down to enjoy the meal with Alexandra and your other classmates. Bring a guest if you like.
Spend the night at Maison Conti.
Cost: 235€

Includes the course and all ingredients, the meal including wine, one night’s lodging, and Sunday breakfast. To share the experience with your partner add 150€. Or, for meals and accomodation only (double occupancy),
add 35€ for your guest

 

Sunday May 2:

Spring sweets:

  • Rhubarb and orange flower tart
  • Toasted almond-rose panna cotta with raspberry coulis
  • Perfect molten chocolate cakes with coffee crème anglaise

 

After the preparation, you will sit down to enjoy the meal with Alexandra and your other classmates. Bring a guest if you like.
Spend the night at Maison Conti.
Cost: 235€

Special reduced rate both classes, all meals and beverages, and one night at Maison Conti: 335€ per single, 565€ per couple.

If you would like to bring a guest, but your partner is not interested in taking the cooking class, they are quite welcome to sit by the fire and read, take a walk on one of the many hiking trails in the area or borrow one of the Maison Conti bikes. We also have fishing and golf nearby.
